My friends Rick and Mary Kilps '75/'75 shared a fun find with me today...'Parkside Palatables'. It's a cookbook that was created in 1984 and has contributors from across the University. It's always interesting to see what people have in their own UW-P 'archives' and I appreciate when it's shared with me! Thanks, Rick and Mary!
Now, I'm going to share with you! Since this is the time of year for lots of picnics, parties and potlucks, here is a nice dessert recipe that Coach Jim Koch contributed to the cookbook. (I could really go for some of this right now!)
Peanut Butter Squares
1 1/2 cup peanut butter
1 cup plus 2 tablespoons brown sugar, tightly packed
1 3/4 cups powdered sugar
1 cup chocolate chips
1/4 cup melted butter
Mix peanut butter, brown sugar and powdered sugar together well with hands and then spread in a well-greased 9x13 inch pan.
Melt chips and butter together and spread on top of mix in pan.
Freeze and then cut into squares.
